Tryst is our sister restaurant-- well, actually coffeehouse-bar-lounge--
that began in 1998. Now, Open City carries on this traditon in a unique
environment. We challenge you to have a better espresso drink with a
full meal anywhere in America.
Coffee has more aromatic compounds than anything we ingest. It takes extraordinary varieties of a specific species, terroir, cultivation, processing, handling, roasting, and extraction in order to produce a great cup. It also takes the right brewing parameters such as water to coffee ratio, particle size, time, temperature, turbulence, and water composition. That's why we train our baristas to use some of the best tools and technology in the industry, such as La Marzocco's GB5 espresso machine, Mazzer Robur E and Ditting grinders, and a reverse osmosis filtration system to prepare your coffee. They spend time in a special training facility before ever making a guest a drink and frequently return to hone their skills and knowledge. Our roaster is Counter Culture Coffee who works hard to procure great coffee while sharing our awareness and concern for the socio-economic ramifications of our purchases. Every demitasse and mug served is an expression of the hard work and artisan skill of farmers, roasters and baristas. We just love coffee and hope to share that passion with you.
